Chicken Pulao

How to make Chicken Pulao:


Ingredients required for chicken pulao:

  1. Chicken - 400 grams
  2. Onion - 1 Large
  3. Cardamom -2 
  4. Clove - 2
  5. Cinnamon stick - 2 ( inch)
  6. Bay leaves - 1
  7. Shahi jeera - pinch
  8. Turmeric powder - half tsp
  9. Red chilli powder - 1 tbsp
  10. Salt - as required
  11. Green chillies - 2
  12. Curd/Yoghurt - 3 tbsps
  13. Corriander powder - 1 tsp
  14. Garam masala powder - half tsp
  15. Corriander leaves - half bunch
  16. Mint leaves - half bunch
  17. Oil - 2 tbsps
  18. Rice - 2Cups
  19. Water - 3 Cups

Method:

  • Take chicken into a bowl and add chilli powder,salt,turmeric powder,corriander powder,curd,garam masala powder corriander leaves(chopped),mint leaves(chopped).
  • Mix well and keep it aside for minimum 30 minutes.
  • Put a Vessel on stove and add some oil and whole garam masala and add sliced onions, green chillies and fry till onions turn into golden brown.
  • Add marinated chicken and rice and mix well.
  • Add water and cook it until the rice chicken cooked well.
  • Chicken pulao is ready to be served.

Boondi Ladoo

Ingredients used in Boondi Ladoo

  1. Gram flour(besan) - 500 grams
  2. Sugar - 450 grams
  3. Cardamom powder - 1/2 tsp
  4. Raisins - 2 tbsps
  5. Cashewnuts - 2tbsps
  6. Almonds - 1tbsp
  7. Oil - to fry
  8. Ghee - 2 tbsps
  9. Milk - 1/4 cup
  10. water - as required

Method:

  • Take a vessel put sugar,add water to it and let it boil for few minutes and add milk.
  • Then remove the skum formed while boiling and boil till you get the sugar syrup gets one string consistency.
  • Add cardamom powder ,remove it and set aside.
  • Take a bowl add gram flour , water and mix to a pouring consistency.
  • Take a pan and add oil for frying and place boondi seiver on top of the pan.
  • Pour the ladoo batter in the seiver,fry boondi and tranfer it to a paper towel.Then add it to sugar syrup.
  • Add ghee to a pan adnd fry dry fuits ,nuts and add both ghee and nuts to sugar syrup.
  • Mix well and make ladoos.
  • Enjoy the home made boondi ladoo with kids and family members.

Tomato sambar or Tomato charu

Ingredients:

  1. Tomatoes : 500 gms
  2. Garlic Cloves : 2 numbers
  3. Mint leaves :  2 Tbsps(chopped)
  4. Curry Leaves : 2 springs
  5. Cummin seeds : 2 tsps
  6. Turmeric Powder : pinch
  7. Tamarind pulp : 1 tsp
  8. Chilli powder : 1tsp
  9. Green chill : 1
  10. Red Chilli : 2 
  11. Corriander Powder : 1tsp
  12. Cummin and fennel seeds powder : pinch
  13. Red chilli powder : 1/2 tsp
  14. salt : to taste
  15. Corriander leaves : 1/2 bunch.

Method:

  • Put a vessel add oil,cummin seeds,mint leaves,curry leaves,garlic cloves,green chilli (sliced) and turmeric powder.
  • Add pure(Take a blender and add tomato pieces and blend it till smooth pure.) to it and let it boil for 10 mins.
  • Add red chilli powder,cummin powder, Fennelseeds & cummin seeds powder,corriander powder and salt.
  • Garnish with corriander leaves and serve tomato charu with rice.

Gongoora Mutton Curry

How to make Gongoora mutton curry

Ingredients:

  1. Mutton - 500 grams.
  2. Turmeric powder - pinch.
  3. Ginger garlic paste - 1 tsp.
  4. Onion (chopped) - 1 cup.
  5. Whole garam masala (cardamom, cloves, cinnamon stick) - 2 number.
  6. Oil - 3 tbsps.
  7. Red chili powder - 1 tspn.
  8. Coriander powder - 1 tspn.
  9. Cumin powder - 1/2 tspn.
  10. Green chilies  - 5 number.
  11. Sorrel leaves(Gongoora) - 5 bunches.
  12. Coriander leaves - 1/2 bunch.
  13. Garam masala powder - 1 tspn.
  14. Shahijeera - 1 tspn.
  15. Salt - to taste.

Method:

  • Put pressure cooker add some oil, mutton, cumin powder, red chilli powder, 1/2 cup of water, salt and mix well and cook it with closed lid till the mutton pieces are tender.
  • Now in a pan, add oil, whole garam masala spices along with shahi jeera, chopped onions, salt cook this till onions change colour to golden brown.
  • Now add ginger garlic paste and saute it till raw flavor is gone and add turmeric powder,green chillies, gongoora leaves and cook it on a very slow flame till water drains out .
  • Then add cooked mutton along with the remaining water to the same pan and let it cook for 5 more minutes.
  • Finally add some water if required then add garam masala powder, coriander leaves,add coriander powder mix well.
  • Serve with rice or roti or chapathi.

  1. Lamb Meat or Goat Meat - 500 grams.
  2. Oil - 1 tablespoons.
  3. Pepper powder - 1/2 tsp.
  4. Turmeric powder - 1 pinch.
  5. Red chilli powder - 1 tsp.
  6. Coconut powder - 1 tbsp.
  7. Cardamom - 4.
  8. Clove - 4.
  9. Cinnamon stick - 4.
  10. Black cumin seeds - 1 tsp.
  11. Cumin seeds - 1 tsp.
  12. Coriander powder - 2 tbsp.
  13. Coriander leaves - 1 bunch.
  14. Chopped onion - 2 small.
  15. Cumin powder - 1 tablespoons.
  16. Ginger garlic paste - 1 tablespoon.
  17. Green chillies - 2 numbers.
  18.  Salt - 1 to taste.

Method:

  • Heat oil in a pan, add whole garam masala spices (cinnamon, green cardamom, cloves), cumin seeds, and chopped onion. Cook till they are slightly brown at the edges.
  • Add salt, turmeric powder, ginger garlic paste, when cooked, add cleaned lamb pieces and cook for some time.
  • Then add chili powder, coriander powder, cumin powder and mix. Cook for 20-30 minutes till lamb is 90%cooked (You can also cook lamb in a pressure cooker).
  • Add green chillies, coconut powder, and pepper powder and cook for another 10 minutes till the sauce is thickened.
  • Serve hot with rice, roti or naan by sprinkling coriander leaves on top.

Ingredients used in Chicken Biryani:

  1. Basmati rice - 3 cups.
  2. Onion  - 1 cup.
  3. Oil - 4 tablespoons.
  4. Chicken medium pieces - 1000 grams.
  5. Yogurt - 2 cups.
  6. Turmeric powder - 1/4 tea spoon.
  7. Saffron - 1 pinch.
  8. Red chili powder - 1/2 tea spoon.
  9. Mint leaves - 1 bunch.
  10. Bay leaf - 2 numbers.
  11. Coriander powder - 1 tea spoon.
  12. Cumin powder - 1 tea spoon.
  13. Cumin seeds - 1/2 tea spoon.
  14. Pepper corns - 1/2 tea spoon.
  15. Lime juice - 1 tablespoon.
  16. Black cumin seeds - 1 tea spoon.
  17. Cloves/lavang - 2 numbers.
  18. Green chillies (chopped) - 4 numbers.
  19. Javetri/mace - 1 number.
  20. Black cardamom - 2 numbers.
  21. Coriander leaves - 1 bunch.
  22. Ginger garlic paste - 1 tablespoon.
  23. Cinnamon stick (1 inch) - 2 numbers.
  24. Green cardamom - 3 numbers.
  25. Salt - to taste.

Method:

  • In a bowl take chicken, ginger garlic paste, chopped mint,corriander leaves, curd, green chilies, peppercorns, 1/2 teaspoon black cumin, cumin, chili powder, turmeric powder, salt, cumin powder, coriander powder and whole garam masala dry( bay leaf, javetri, cinnamon stick,cloves, green cardamom, black cardamom), fried onion ,oil and mix them and put aside for 30 minutes.
  • Wash rice and soak it in water for about 30 minutes.
  • Now in a bowl boil water by seasoning with shahjeera(black cummin), salt, oil and bring to boil.
  • Then add rice to cook .Let it boil for 2 minutes and drain the water into a bowl.
  • Now take  a deeper vessel pan, add marinated chicken and spread at the bottom then spread the rice over chicken
  • Add saffron color  and pour the drained water over it and cook for 5 mins over high flame then cook on low flame for 30 minutes with a closed lid or by covering with a cloth before closing lid.
  • Add fried onions,coriander leaves,mint leaves before serving.
  • Serve warm with raitha.





Double ka Meeta

Double ka Meeta Recipe:

Double ka Meeta is the delicious Indian dessert  made of bread.It is famous in Hyderabad. In Indian weddings and parties mostly served dessert is double ka meeta. 


Prep. Time: 15 mins
Cooking Time: 20 mins
Total time: 35 mins

Ingredients:

  1. Bread -10 slices
  2. Sugar - 2 cups
  3. Water - 2 cups
  4. Cardamom - 3 numbers
  5. Saffron - pinch(optional)
  6. Raisins - 1/2 cup
  7. Almond - 1/2 cup
  8. Cashew nuts - 1/2 cup
  9. Pista - 2 tbsp
  10. Dates - 1/2 cup
  11. Milk - 500ml
  12. Lime juice - 1/2 tsp
  13. Ghee or oil - as required(to fry bread slices)

Method:

  • Cut bread slices into halves diagonally or make into squares and let them dry overnight.
  • Fry the dried bread slices in ghee or oil till golden brown and keep it aside.
  • Fry the dry fruits and nuts and take it in a plate.
  • Take  sugar and add water and boil it for 7 mins.Add cardamom,lime juice and saffron to the syrup and keep it aside.
  • Take milk and oil till it is reduced to 1/4.
  • Keep fried bread soak in sugar syrup for few seconds and remove to a serving dish.
  • Put all nuts ,dry fruits over the sweetened bread and pour milk over it  and serve warm.
